Esta hecho 100% de Agave Espadín y su sabor naturalmente ahumado es derivado de cocinar las mejores plantas de agave en un horno de piedra cónico sobre mezquite y ocote, maderas nativas de Oaxaca. Estos ingredientes dan a Amally su carácter particular y único sabor.

Usando la receta de nuestros ancestros, Saul Rojas Gutiérrez ha hecho Mezcal Premium por 40 años.
Amally es hecho en pequeños barriles utilizando métodos tradicionales.
Envasado en un palenque en Matatlán, Oaxaca, la tercera generación de la familia destilera.

La planta de agave -también conocida como maguey- puede crecer durante 25 a 30 años,pero el que nosotros usamos para hacer el mezcal es cosechado hasta un periodo de 6 a 7 años. Luego, las espinas de la planta son cortadas y el corazón restante -llamado piña-,lo utilizamos para la fabricación del mezcal.

La próxima etapa, es cocer el agave durante cuatro días. Luego, el agave asado se muele en un molino de roca, girada por un caballo. Cuando el agave termina de molerse, se coloca en un barril de madera con agua y se deja fermentar durante varios días. Después de la fermentación, la mezcla se debe destilar. En la segunda destilación, el Mezcal se debe agitar para obtener el grado de alcohol buscado. Por último, es embotellado y etiquetado con todo el Amor.

Amally is produced in small batches with traditional methods. Crafted at a palenque in Matatlán, Oaxaca,by a third generation grower and distiller.
The agave plant - also known as maguey - can grow for 25 to 30 years, but the one we use to make mezcal is harvested for a period of 6 to 7 years. Then, the plant's spines are cut and the remaining heart-called pineapple-we use it for the manufacture of mezcal.
The next step is to cook the agave for four days. Then, the agave roasted is ground in a rock mill, turned by a horse. When the agave is finished being ground, it is placed in a wooden barrel with water and allowed to ferment for several days. After fermentation, the mixture should be distilled. In the second distillation, the Mezcal should be shaken to obtain the desired degree of alcohol. Finally, it is bottled and labeled with all the Love.

Story of Amally

According to the Matatlan’s Myth, the Duendes* (bin binich) of valley protect and take care of magueys, so if you harvest without their blessing, every distilled maguey produces an hallucinatory and crazy effect.

Amally was the daughter of one Mezcal’s lord in Matatlan, she was the only one accepted by the duendes to play around and get the blessing in every maguey touched by her. Therefore every Amally’s Maguey produces a sweet and smooth effect of happiness, joy and love... A love of maguey.
